Maple Brown Sugar Roll-Out Sugar Cookies (No-Spread Fall Cookie Recipe)

Maple and brown sugar might just be one of the best flavor combinations for fall. These Maple Brown Sugar Roll-Out Sugar Cookies are buttery, rich, and packed with maple flavor, with just enough brown sugar to add a warm, caramelized depth. Best of all, they’re made to hold their shape, making them perfect for cookie cutters, royal icing, and all of your fall cookie decorating.
Maple Brown Sugar Roll-Out Sugar Cookies
Yields: 12 cookies
Ingredients:
1 cup (226g) unsalted butter, cold and cubed
3/4 cup (150g) granulated sugar
1/4 cup (55g) brown sugar
1 large egg
1/2 tablespoon butter vanilla emulsion
1/2 tablespoon maple emulsion
2 teaspoons brown butter cookie blend
3 cups (375g) all-purpose flour
¾ teaspoon salt
⅛-¼ teaspoon baking powder
Instructions:
In the bowl of a stand mixer fitted with the paddle attachment, combine the cold butter, granulated sugar, and brown sugar. Mix on low for about 30–60 seconds until creamed.
Add the egg, butter vanilla emulsion, and maple bakery emulsion. Mix just until incorporated.
In a separate bowl, whisk together the flour, brown butter cookie blend, salt, and baking powder.
Gradually add the dry ingredients to the butter mixture. Mix on low just until a dense, uniform dough forms.
Divide the dough and roll between sheets of parchment paper to approximately 3/8 -inch thickness.
Refrigerate the rolled dough flat for at least 2 hours or overnight.
Preheat oven to 350°F. Cut the chilled dough into desired shapes and transfer to a parchment-lined baking sheet.
Re-roll scraps as needed, chilling the dough again if it becomes too warm.
Bake for 10–12 minutes, or until the cookies are set and no longer shiny.
Allow cookies to cool completely before decorating.
Royal Icing Tip: I like pairing these cookies with a simple butter vanilla royal icing. It complements the maple and brown sugar without overpowering the cookie itself. If you want even more maple flavor, you can also add a small amount of maple emulsion to your royal icing.
