Lemon Roll-Out Sugar Cookies
Yields: 12 cookies
Ingredients:
1 cup salted butter
1 cup sugar
1 large egg
2 teaspoons lemon extract
Zest of 1 Meyer lemon
3 cups flour
3/4 tsp salt
1/4 tsp baking powder
Instructions:
Cream the butter and sugar until light and fluffy.
Add the egg, lemon extract, and lemon zest, mixing until fully incorporated.
Slowly add flour, salt, and baking powder until a smooth dough forms.
Roll out the dough and refrigerate for 1–2 hours.
Preheat the oven to 350°F.
