Nothing is better than a delicious popsicle on a hot summer day. Nothing!!
I remember playing in the sprinklers on the front lawn while waiting for the ice cream truck to appear. Some days I was all about the Flintstone's push-up or a Strawberry Shortcake bar, but most days, it was an Orange Creamsicle—a perfect blend of tangy citrus and creamy ice cream center. This cookie recipe is everything sunshine, summer days, and happy-making and will take you back to those summer days no matter what time of year.
🧡Orange Creamsicle Roll-out Sugar Cookies🧡
Yields 12 cookies
1 C Unsalted butter
1 C Sugar
1 Large egg
1-2 tsp. Orange bakery emulsion
5.1 oz Vanilla pudding mix
2 1/2 C Flour
3/4 tsp. Salt
1/4 tsp. Baking powder
1/2- 1 C Mini white chocolate chips (Optional)
Cream the butter and sugar. Add egg and flavorings. Add dry ingredients. Mix in mini chips.
Roll out dough and refrigerate for 1-2 hrs. Cut out into desired shapes and bake at 375 for 10-12 minutes.
For the royal icing: add 1-2 tsp orange emulsion while mixing your icing.
