These Key Lime Roll-Out Sugar Cookies are like a tropical vacation in cookie form—zesty, sweet, and just the right amount of tangy sunshine.


Key Lime Roll-Out Sugar Cookies

Yields: 12 cookies


Ingredients:

    •    1 cup unsalted butter

    •    1 cup sugar

    •    1–2 tbsp lime juice

    •    1 tbsp lime zest

    •    2 large eggs

    •    3 cups flour

    •    3/4 tsp salt

    •    1/4 tsp baking powder


Instructions:

  1. Zest and juice two limes. 

  2. Cream the butter and sugar until light and fluffy. 

  3. Add the lime zest and lime juice. Mix. 

  4. Add eggs and dry ingredients, and mix until dough forms.

  5. Roll out the dough and refrigerate for 1–2 hours.

  6. Preheat the oven to 375°F. 

  7. Cut into desired shapes and bake for 10–12 minutes.


Royal Icing Tip: Add lime juice to your royal icing for a bright, citrusy flavor.
