New York Style Bakery Chocolate Chip Cookies

Yields: 12 cookies


Ingredients:


  • 1 cup unsalted butter, cold

  • ¼ cup granulated sugar

  • 1 cup dark brown sugar

  • 2 tsp vanilla bean paste

  • 1 large egg + 1 large egg yolk, cold

  • 1/2 tsp baking powder

  • ¼ tsp baking soda

  • ½ tsp salt

  • 1 tsp corn starch

  • ½ tsp instant coffee

  • 2 ½ c all-purpose flour

  • 1 cup semi-sweet chocolate chips

  • ½ cup milk chocolate chips


Instructions:

1. In a mixing bowl, cream the butter with both sugars until light and fluffy.

3. Add the egg, yolk, and vanilla. Beat until fully incorporated.

4. In another bowl, mix the flour, baking powder, baking soda, salt, corn starch, and instant coffee.

5. Add the dry ingredients to your mixing bowl and mix on low until the dough forms.

5. Fold in the chocolate chips

7. Preheat oven to 350°F (175°C). Line a tray with parchment paper.

6.  Scoop large dough balls onto the tray and place in freezer for 3-5 minutes

8. Bake 10–12 minutes, until edges are golden but centers are soft.

9. Check internal temperature with a digital thermometer. Remove at 175–178°F for a gooey center.

10. Let cool on the tray for 5 minutes before transferring to a wire rack.
