Caramel-Chocolate Chunk Cookies
Yields: 12 cookies
Ingredients:
1 cup unsalted butter, softened
3/4 cup granulated sugar
1/4 cup dark brown sugar
1 teaspoon vanilla bean paste
1 large egg + 1 large egg yolk
1 3/4 cups all-purpose flour
1/2 teaspoon salt
1 teaspoon baking powder
1 teaspoon cornstarch
1/2 cup semi-sweet chocolate chips
1/4 cup dark chocolate chips
50g (about 5–6) soft caramel candies, chopped
Instructions:
Chop the chocolate and caramel candies into large chunks and set aside.
In a mixing bowl, cream the softened butter with both sugars until light and fluffy.
Add the egg, egg yolk, and vanilla. Beat until fully incorporated.
Mix in the flour, baking powder, salt, and cornstarch until a dough forms.
Fold in the chopped chocolates and caramel pieces.
Chill the dough for at least 30 minutes for thicker cookies.
Preheat oven to 350°F (175°C). Line a baking tray with parchment paper.
Scoop large dough balls onto the tray.
Bake for 10–12 minutes, until the edges are golden, but the centers are still soft.
Check the internal temperature with a digital thermometer. Remove at 175–178°F for a gooey center.
Let cool on the tray for 5 minutes before transferring to a wire rack.
