Pumpkin Spice Roll-Out Sugar Cookies

Yields: 12 cookies

Ingredients:

• 1 cup unsalted butter

• 1/2 cup pumpkin purée

• 2 tbsp pumpkin butter

• 2–3 tsp pumpkin pie spice

• 4 cups flour

• 2 tbsp corn starch

• 3/4 tsp salt

• 1/4 tsp baking powder

*Optional: Use 3/4 cup sugar and 1/4 cup brown sugar instead of 1 cup sugar

Instructions:

1. Cream the butter and sugar until light and fluffy. 

2. Add the egg, pumpkin purée, pumpkin butter, and pumpkin pie spice, mixing until combined.

3. Gradually mix in the dry ingredients until a dough forms.

4. Roll out the dough and refrigerate for 1–2 hours. 

5. Preheat the oven to 375°F. 

6. Cut into desired shapes and bake for 10–12 minutes.

Pro Tip: Add cinnamon or cream cheese extract to your royal icing for a complementary flavor!
