Warm, buttery, perfectly spiced, and officially my favorite cookie from this round of fall recipe testing. These Chai Roll-Out Sugar Cookies are packed with cinnamon, ginger, cardamom, cloves, and nutmeg for that cozy chai flavor, while still holding their shape beautifully for decorating. If fall had a cookie, this might be it.

Chai Roll-Out Sugar Cookies

Yields: 12 cookies

Ingredients:

Instructions:

  1. In the bowl of a stand mixer fitted with the paddle attachment, combine the cold butter, granulated sugar, and brown sugar. Mix on low for about 30–60 seconds or until creamed.

  2. Add the egg and butter vanilla emulsion. Mix just until incorporated.

  3. In a separate bowl, whisk together the flour, salt, baking powder, cinnamon, ginger, cardamom, cloves, and nutmeg.

  4. Gradually add the dry ingredients to the butter mixture. Mix on low just until a dense, uniform dough forms.

  5. Divide the dough and roll between sheets of parchment paper to approximately ¼-inch thickness.

  6. Refrigerate the rolled dough flat for at least 2 hours or overnight.

  7. Preheat oven to 350°F. Cut the chilled dough into desired shapes and transfer to a parchment-lined baking sheet.

  8. Re-roll scraps as needed, chilling the dough again if it becomes too warm.

  9. Bake for 10–12 minutes, or until the cookies are set and the edges are just beginning to turn golden.

  10. Cool completely before decorating.

Royal Icing Tip: I'd pair these with butter vanilla royal icing. The cookie itself already has layers of warm chai spice, so the icing doesn't need anything complicated. The creamy vanilla flavor gives it almost a chai tea finish.

These Chai Roll-Out Sugar Cookies may have been my favorite surprise of fall recipe testing. They're warm and cozy without being overwhelmingly spiced, and the cardamom gives them that unmistakable chai flavor. Plus, they hold their shape beautifully, so you don't have to choose between a flavored sugar cookie and one that's actually made for decorating.
