Peppermint flavorings, crème de menthe chocolates, and mini chocolate chips to create a tasty treat that will surely catch any leprechaun!

Mint Chocolate Chip Roll-Out Sugar Cookies
Yields 12 Cookies
Ingredients
1 C unsalted butter
1 C sugar
1- 2 tsp peppermint extract
1 large egg
3 drops green food coloring
3 C flour
3/4 tsp. salt
1/4 tsp. baking powder
1/2 C mini chocolate chips
1/2 C Andes crème de menthe baking chips
Instructions
Cream the butter and sugar.
Add egg, food coloring, and peppermint flavoring. Mix well.
Add dry ingredients and mix until full incorporated.
Add in baking chips.
Roll out dough between layers of parchment paper and refrigerate for 1-2 hrs.
Preheat oven to 375°F.
Cut out into desired shapes and bake for 10-12 minutes.
