Strawberry & Cream Roll-Out Sugar Cookies
Yields 12 Cookies
Ingredients
1 cup unsalted butter
1 cup sugar
1 tsp vanilla extract
1–2 tsp strawberry emulsion
1 egg
1 tbsp water
3 cups flour
3/4 tsp salt
1/4 tsp baking powder
1.2 oz freeze-dried strawberries (powdered)
1 cup white chocolate chips (optional)
Directions
Place the freeze-dried strawberries in a food processor or blender and pulse into a fine powder—strain to remove seeds and set aside.
In a large bowl, cream together butter and sugar. Add the egg, vanilla extract, and strawberry emulsion, mixing until well combined.
In a separate bowl, whisk together flour, salt, baking powder, and powdered strawberries.
Gradually mix the dry ingredients into the wet ingredients until a dough forms. If the dough feels too dry, add 1 tablespoon of water at a time until the consistency is right.
Roll out the dough between two sheets of parchment paper and refrigerate for 2–3 hours.
Preheat the oven to 375°F (190°C).
Cut into shapes and bake as desired.
