Hot Chocolate Roll-Out Sugar Cookies: Cozy Cocoa Cookie Recipe with Marshmallows

These Hot Chocolate Roll-Out Sugar Cookies bring all the comfort of your favorite winter drink: packed with rich cocoa flavor, mini chocolate chips, and marshmallow magic in every bite. Whether you roll and cut or go the quick drop-cookie route, they’re soft, festive, and made for snow days and cocoa mugs.
Hot Chocolate Roll-Out Sugar Cookies
Yields: 12 cookies
Ingredients:
1 cup cold butter
3/4 cup sugar
1/4 cup brown sugar
1 egg
1–2 tsp vanilla
1/4 tsp almond emulsion
2 packets hot cocoa mix
3/4 tsp salt
1/4 tsp baking powder
2 3/4–3 cups flour
Mini Nestle Tollhouse chocolate chips (to desired amount)
Dehydrated mini marshmallows (measure with heart)
Instructions:
Cream butter, sugars, egg, vanilla, and almond emulsion.
Mix in hot cocoa mix, salt, baking powder, and flour.
Fold in marshmallows & chocolate chips.
For roll-out cookies: Roll, chill, and cut into shapes.
For drop cookies: Preheat the oven, then scoop dough onto a baking sheet.
Bake at 375°F for 11–12 minutes.
Carefully press in additional mini marshmallows when the cookies come out of the oven. (Caution: cookies will be hot.)
