These Banana Bread-Inspired Roll-Out Sugar Cookies take everything you love about a warm, spiced slice of banana bread and wrap it up in a soft, rollable dough perfect for cookie cutters and icing. Think comfort food meets cookie magic!
Banana Bread Roll-Out Sugar Cookies
Yields: 12 cookies
Ingredients:
1 cup (227g) unsalted butter, cold
1 cup (200g) granulated sugar
1/4 cup (55g) light brown sugar, packed
1/2 cup (120g) mashed banana (about 1 medium banana)
1 large egg
3 cups (360g) all-purpose flour
1/2 tsp baking soda
1/2 tsp salt
1 ½ tsp ground cinnamon
1/8 tsp ground nutmeg
Instructions:
In a large bowl, cream together the browned butter, granulated sugar, and brown sugar until light and fluffy.
Mix in the mashed banana, egg, and banana extract until well combined.
In a separate bowl, whisk together the flour, baking soda, salt, cinnamon, and nutmeg.
Gradually add the dry ingredients to the wet ingredients and mix until a dough forms.
Roll out doubt between two pieces of parchment paper and chill in the refrigerator for 2+ hours
Cut into desired shapes a lined baking sheet and freeze for 2-3 minutes.
Bake at 350°F (177°C) for 10-11 minutes
Cool completely before decorating.
