St. Patrick's Day is just around the corner, and we are feeling quite lucky with our Mint Chocolate Chip Roll-out Sugar cookies. In this recipe, I work with peppermint flavorings, crème de menthe chocolates, and mini chocolate chips to create a tasty treat that will surely catch any leprechaun.
🍀Mint Chocolate Chip Cookies🍀 Yields 12 cookies
1 C unsalted butter
1 C Sugar
1- 2 tsp peppermint extract
1 large egg
3 drops green food coloring
3 C flour
3/4 tsp. salt
1/4 tsp. baking powder
1/2 C mini chocolate chips
1/2 C Andes crème de menthe baking chips Cream the butter and sugar. Add egg, food coloring, and peppermint flavoring. Mix well. Add dry ingredients and mix until full incorporated. Add in baking chips. Roll out dough between layers of parchment paper and and refrigerate for 1-2 hrs. Cut out into desired shapes and bake at 375 for 10-12 minutes.
